why are some dogs picky eaters?

when my dog was still a puppy, he would immediately eat the food that i would give him. but when he got older (like a year until now, he's 5), he became picky. first, he wouldn't eat dog food. so we gave him cooked chicken, fish or pork. we would boil the meat or fish until it's soft and that's what he eats. then we switched back to dog food after 2 or 3 years and he ate dog food again. but he's doesn't eat his food at once. he would push it around first and sometimes after pushing, he would eat but sometimes he doesn't. he would just wait until he's hungry (i think)
